when you take a image as a jpeg the camera does the following white balance,contrast,saturation,sharpness then its compressed so you loss some quality
when you take a raw image none of them are done and you have total control over the end image
a jpeg file can be fine some times but there's all ways the one time when you wished you had shot in raw when the camera don't give you the right image then it becomes a nightmare trying to edit it in software and a plus for shooting in raw say if you edited your raw image and some one did not like the way it looked after you can go back to the raw image in software and reset it back to how it was taken by your camera and redone the image you cant do that with a jpeg
