Camera Profiles

I can understand the value of camera profiles in the studio where lighting is controlled but have doubts of its validity in the field.
Martin Evening was kind enough to tell how but was a bit sketchy on the why and the application in a colour controlled workflow.
For instance I calibrate my monitor with a Spyder and my printer with Monaco EZcolor.
My Nikon is set to shoot in Adobe RGB whilst my two Panasonic cameras will only allow sRGB but all will allow for RAW files. I thought these color spaces were adequate in terms of Photoshop use and have not yet tried RAW but Martin has set me thinking.

I consulted my "bible" - Color Confidence by Tim Grey - and found an explanation of how to shoot on site to get profiles but it all seems a bit complicated to me.

Are camera profiles valid and reasonable out side the studio or would RAW be a better answer. Am I up a gum tree and failing to understand what is going on?
