Really Stuck on Module 2

I've been dragging module 2 out for nearly 8 months now! I've completed everything except for the two final photos to show a scene focused on infinity and another scene demonstrating hyperfocal focus.

The problem is that I don't really understand what to do. I've been out and taken numerous photos with what I thought was the correct method but they never work out.

I've tried using a 18-55mm lens with no infinity markings and focusing on a subject in the distance (for infinity) and a subject about a third of the way in (for hyperfocal).

I've also tried using a 70-300mm lens with infinity markings but again I jut can't seem to get the desired result.

Please can someone help me. I'm so frustrated I feel like giving up and I'm worried I'll never finish the whole course in 3 years at this rate.
